Ingredients

  • ½ bag Alexia® Sweet Potato Waffle Fries (20 oz)
  • 7 oz Plain Greek Yogurt
  • 2 tbsp Fresh Lemon Juice
  • ¼ cup Walnuts, chopped and toasted
  • 1 tbsp Fresh Parsley, chopped
  • 1 tbsp Fresh Mint, chopped
  • ¼ cup Feta Cheese, crumbled
  • ¼ cup Pomegranate Arils
  • Green Onions, sliced, for garnish
  • Flakey Sea Salt and Black pepper, to taste

Directions

  1. Prepare the fries according to package instructions.

  2. Meanwhile, stir the yogurt and lemon juice to combine. Set aside.

  3. Toast the walnuts in a small skillet over low heat for 3-5 minutes, stirring occasionally, until warm and fragrant. Remove from heat.

  4. Spread the yogurt mixture on a large plate or serving tray. Layer the prepped sweet potato waffle fries evenly over the yogurt mixture, then add on the toasted walnuts, parsley, mint, feta, pomegranate arils, and green onions. Add a pinch of flakey sea salt and freshly ground black pepper to taste.

  5. Enjoy Mediterranean sweet potato fries directly from the plate or serve in individual portions.
