Roasted Garlic Parmesan Aioli

Freshly roasted heads of garlic, Dijon mustard, olive oil, Parmesan cheese, fresh lemon juice, and thyme create the perfect roasted garlic aioli recipe to pair with Alexia® Rosemary Fries.

Ingredients

  • 3 Heads Garlic
  • 2 tbsp Olive Oil
  • ½ tsp Kosher Salt
  • ¼ tsp Black Pepper
  • 1 cup Mayonnaise
  • 2 tsp Dijon Mustard
  • ¾ cup Grated Parmesan Cheese
  • ½ tsp Lemon Juice
  • 2 tsp Fresh Thyme

Directions

  1. To make the roasted garlic: Preheat the oven to 425°F. Cut the tops off of the heads of garlic and rub with olive oil, salt, and pepper. Tightly wrap the garlic in aluminum foil and place in a shallow baking dish. Bake for 40-50 minutes or until the garlic is golden brown and can be easily pierced with a fork. Remove from the oven and let cool to room temperature.

  2. Once cool to touch, gently press at the bottom of each garlic clove to remove from the skin.

  3. Add the roasted garlic and the rest of the ingredients to a food processor and pulse until smooth and creamy.

  4. Pair roasted garlic aioli sauce with Alexia® Rosemary Fries, prepared according to package instructions.
