Ingredients
- 1 bag Alexia® Waffle Cut Sweet Potato Fries (20 oz)
- 8 oz Ricotta Cheese
- ¼ cup Milk
- 2 tbsp Capers, chopped with brine
- Ground Black Pepper
- Dill, chopped and extra sprig for garnish
- Chives, chopped
- 6-8 oz Smoked Salmon, thin pieces
- 1-2 Lemons, zested
- Lemon Wedge, on the side

Prepare the fries according to package instructions.

While the fries are being prepared, whip up caper ricotta (ricotta cheese, milk, capers, black pepper) using a hand mixer until light and airy. Set aside.

Zest lemons using a micro plane or zester. When done, place zest in a small ramekin until plating.

Remove waffle fries and place onto a cool baking sheet. Spoon or pipe on caper ricotta. Add a torn piece of smoked salmon and finish the salmon bites recipe with fresh lemon zest.

Place completed pieces onto a serving platter and enjoy!
