These lemony smoked salmon bites topped with dabs of creamy caper ricotta atop individual Alexia® Waffle Cut Sweet Potato Fries make for the perfect party platter.

Ingredients

  • 1 bag Alexia® Waffle Cut Sweet Potato Fries (20 oz)
  • 8 oz Ricotta Cheese
  • ¼ cup Milk
  • 2 tbsp Capers, chopped with brine
  • Ground Black Pepper
  • Dill, chopped and extra sprig for garnish
  • Chives, chopped
  • 6-8 oz Smoked Salmon, thin pieces
  • 1-2 Lemons, zested
  • Lemon Wedge, on the side

Directions

  1. Prepare the fries according to package instructions.

  2. While the fries are being prepared, whip up caper ricotta (ricotta cheese, milk, capers, black pepper) using a hand mixer until light and airy. Set aside.

  3. Zest lemons using a micro plane or zester. When done, place zest in a small ramekin until plating.

  4. Remove waffle fries and place onto a cool baking sheet. Spoon or pipe on caper ricotta. Add a torn piece of smoked salmon and finish the salmon bites recipe with fresh lemon zest.

  5. Place completed pieces onto a serving platter and enjoy!
