Waffle Fry BLT with Avocado Sauce

Alexia® Waffle Cut Seasoned Fries, bacon, lettuce, tomato, and an avocado dipping sauce create a new and improved version of the classic BLT.

Ingredients

  • 1 bag Alexia® Waffle Cut Seasoned Fries (20 oz)
  • 8 oz Bacon
  • 2 Ripe Avocados
  • ⅓ cup Sour Cream
  • 2 tbsp Fresh Parsley, optional
  • Salt, to taste
  • Water, if needed to thin out the sauce as desired
  • 2-3 Tomatoes, sliced
  • Lettuce Leaves, such as Iceberg or Romaine
  • Mayonnaise, optional

Directions

  1. Prepare the fries and bacon according to package instructions.

  2. Meanwhile, in a blender, combine the avocados, lemon juice, sour cream, and parsley. Blend until smooth. If the sauce is too thick, add 1 tablespoon of water at a time, as needed. Salt to taste.

  3. To assemble the mini BLTs, start with a cooked waffle fry, spread a layer of avocado sauce and mayonnaise (if using), then layer on lettuce, tomato slice, bacon (broken into pieces to fit), and another fry on top to complete the sandwich.
