Ingredients
- 1 bag Alexia® Waffle Cut Seasoned Fries (20 oz)
- 8 oz Bacon
- 2 Ripe Avocados
- ⅓ cup Sour Cream
- 2 tbsp Fresh Parsley, optional
- Salt, to taste
- Water, if needed to thin out the sauce as desired
- 2-3 Tomatoes, sliced
- Lettuce Leaves, such as Iceberg or Romaine
- Mayonnaise, optional

Prepare the fries and bacon according to package instructions.

Meanwhile, in a blender, combine the avocados, lemon juice, sour cream, and parsley. Blend until smooth. If the sauce is too thick, add 1 tablespoon of water at a time, as needed. Salt to taste.

To assemble the mini BLTs, start with a cooked waffle fry, spread a layer of avocado sauce and mayonnaise (if using), then layer on lettuce, tomato slice, bacon (broken into pieces to fit), and another fry on top to complete the sandwich.
