Ingredients

  • 1 Bag Alexia® Spice of Life Indian Curry frozen potatoes (16 oz)
  • ¼ Cup Avocado Oil
  • 1 tsp Cumin Seeds
  • 1 Medium Onion, finely chopped
  • 3-4 Cloves Garlic, crushed
  • ½ inch Ginger piece, crushed
  • 1-2 Green Chili Peppers (such as Serrano or Thai), slit in half
  • 1 Medium to Large Tomato, finely chopped
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • ¼ -⅓ tsp Turmeric Powder
  • ¼ tsp Red Chili Powder
  • 1 lb (2 bunches) Spinach, thoroughly washed and stems removed, finely chopped, water as needed
  • 1 tsp Lime or Lemon Juice, freshly squeezed
  • Salt, to taste
  • Roti, Naan, Rice or Bread (optional side)
  • Plain Yogurt, (optional garnish)
  • Red Onions, chopped (optional garnish)
  • Water (as needed)

Directions

  1. Prepare the potatoes according to the air fryer instructions on the packaging.

  2. In a large pan, heat avocado oil over medium-high heat and add the cumin seeds. Allow them to sizzle for a few seconds. Next, add the onion, ginger, and garlic and cook, stirring often, until slightly golden, about 5-7 minutes. Add the green chili pepper and cook slightly for about 20 seconds. Add the chopped tomato and spice powders. Cook until the tomato becomes soft and the oil starts to leave the sides, approximately 3 minutes.

  3. Raise the heat to high and add the spinach. Stir-fry it until it loses its moisture, which should take about 10 minutes. Add water as needed to prevent the spinach from sticking to the bottom. If you need more time to cook, add ¼ cup of water, cover, and cook on low-medium heat for 5 minutes. 

  4. Once the spinach is cooked, add the Indian curry potatoes and stir to coat the potatoes with the spinach. Add salt as needed. Turn off the heat and sprinkle lime or lemon juice.

  5. Serve hot with roti, naan, rice, or bread. You can also serve yogurt and chopped red onions on the side if desired.
