Yucatan Chicken Skewers
These marinated Yucatan chicken skewers are exceptional when complemented by our Spice of Life™ Cilantro Lime potatoes and zesty lime cream sauce.
Ingredients
- 1 bag of Alexia® Spice of Life™ Cilantro Lime (16 oz)
- 6 Chicken Breast, skinless and boneless, cut in half lengthwise
- ½ cup Orange Juice, freshly squeezed
- 2 tbsp Canola Oil
- 2 tbsp Ancho Chili Powder
- 3 Garlic Cloves, coarsley chopped
- 2 tbsp Chipotle in Adobo Sauce, chopped
- Kosher Salt, to taste
- Black Pepper, to taste
- 1 cup Mexican Crema or Sour Cream
- 3 tbsp Lime Juice, freshly squeezed
- 2 tsp Lime Zest, finely grated
- ½ cup Lime Juice freshly squeezed
Directions

Prepare the potatoes according to package instructions.

Place chicken into a large shallow baking dish. Whisk together orange juice, lime juice, oil, chili powder, garlic, and chipotle. Pour over chicken and marinate in the refrigerator for 1 hour.

Skewer each half chicken breast with 2 skewers so that they lay flat. Prepare the grill on high heat. Remove the chicken breast from the marinade and sprinkle with salt and pepper on both sides.

Place the chicken directly over the grill and cook until each side becomes golden brown and slightly charred, about 4 minutes per side. Turn, cover the grill, and cook for another 3-4 minutes until tender.

Remove from the grill and let rest for 5 minutes.

In a bowl, mix Mexican crema, lime juice, and salt. Finish with extra lime zest as a garnish on top. Refrigerate if making well ahead of time. Serve as a dip.

Cut the Yucatan chicken breast directly down the center, creating 2 skewers. Serve with Cilantro Lime potatoes and lime crema sauce.
