Ingredients

  • 1 bag Alexia® Spice of Life™ Thai Inspired Basil Chili (16 oz)
  • 1 Flatbread
  • 1 tbsp Olive Oil
  • 1 Medium Chicken Breast, halved
  • 2 cups Mozzarella, shredded
  • ¼ cup Carrots, shredded
  • 2 Scallions, chopped
  • ½ cup Peanut Butter
  • 2 tsp Red Wine Vinegar
  • 1 tsp Ginger, minced
  • 2 tsp Garlic, minced
  • 2 tsp Soy Sauce
  • 1 tsp Chili Sauce
  • 2 tbsp Water
  • Salt, to taste

Directions

  1. Prepare the potatoes according to air fryer instructions on the packaging.

  2. Meanwhile, prepare the chicken. Lightly pound the chicken breast to about ¼ inch thick. Drizzle it with olive oil and season with salt and pepper. Heat a medium sized pan on medium-high heat, or heat up your grill, add the chicken, and cook until it’s cooked through, about 3 minutes per side. Transfer it to a cutting board and let it sit for a few minutes before dicing the chicken.

  3. Once the chicken is done, begin making the sauce by combining all the ingredients for the peanut sauce in a saucepan over medium heat. Bring the sauce to a gentle boil for one minute. Or use store-bought peanut sauce. Take ¼ cup of the peanut sauce and mix it with the diced chicken.

  4. To assemble, spread the peanut sauce on the flatbread, leaving extra to drizzle on top. Add half of the cheese, then add the potatoes, carrots, and scallions. Sprinkle the remaining cheese over the flatbread.

  5. Bake in the oven until the flatbread is crisp and the cheese is bubbly and golden, about 3-5 minutes. Once the Spicy Thai Chicken Pizza is finished, drizzle it with the remaining peanut sauce. Serve immediately.
